My project focusses on achieving authentic meat aroma in plant-based meat products during thermomechanical processing of the plant protein. Therefore, my research tries to obtain more insight in the chemical pathways occuring during thermomechanical processing, looking at the influence of precursor addition, protein matrix and processing parameters.
