Gaëlle Boisset (1996) is a nutrition researcher studying the effects of the metabolic impact of food processing under the supervision of Prof. Dr. Ciarán Forde, Prof. Dr. Markus Stieger and Associate Prof. Dr. Edoardo Capuano. In the framework of the TKI public-private partnership project “Meta-Pro”, the impact of conventional and mild food processing will be compared with the food matrix properties, macronutrient digestion, metabolic responses and nutrient bioavailability using established digestion models and human feeding trials. This knowledge will be used to develop design rules for the development of healthier and more sustainable approaches to food processing.
