Towards sustainable Dutch diets - From research to policy
Summary
Food production and consumption have a significant impact on the environment and public health. This thesis investigates how dietary choices relate to health, environmental sustainability, and economic factors within Dutch diets. The research focuses on the environmental impact of healthier diets. Additionally, it investigates the diet costs of healthier and more sustainable diets for individuals with different socio-economic backgrounds. Another part of the thesis is focused on the consumption of highly processed foods and beverages, examining the impact of these foods on health, the environment, and our wallets. Finally, an experiment was conducted to understand how price changes and minor incentives in supermarkets can influence the purchase of meat products.
The thesis contributes to scientific evidence that can underpin effective governmental policies to promote healthier and more environmentally sustainable diets.
