Summary

In my PhD research, I delved into the inner workings of the stomach—examining how it processes foods that contain protein. I used a combination of MRI scans and blood tests to explore how proteins clump together in the stomach, how fast the stomach empties, and how people feel after consuming these foods. The results can be used to optimize processing of foods to make healthier and better digestible products, for instance for infants or health purposes.
