GIANT LEAPS
The project focuses on filling knowledge gaps on health and sustainability of alternative protein sources in human nutrition. It focuses on food technology, food safety and allergenicity, health, environment and sustainability, and consumer acceptance. The project thus develops knowledge that promotes the production and consumption of healthy and sustainable food, and that can make the food chain substantially more sustainable and safer - two central themes of Mission D - valued, healthy and safe food.
GIANT LEAPS will deliver strategic innovations, methodologies and open-access datasets to enable the protein transition and associated dietary change to green our food system and promote human, animal and planetary health and well-being. The project will deliver strategic innovations, methodologies and open-access datasets to make these changes a reality. The transition is complex due to the various actors involved and is further hindered by significant knowledge gaps across the various alternative protein sources and domains of health (food safety, allergenicity, digestibility), environment & sustainability (GHG, environmental and climate impacts, biodiversity, circularity) and implementation & acceptance (technological, sensory, consumer acceptance).
