Specificaties voor het elektrisch bedwelmen van de Noordzeekrab en Europese kreeft: een aanzet

Summary

Due to societal developments, avoiding potential discomfort during killing of the North Sea crab (Cancer pagurus) and European lobster (Homarus gammarus) is important. In Dutch restaurants, these animals are often cooked alive. Potential discomfort during the killing of these animals can be minimised by stunning these animals and killing them in an unconscious state by e.g. boiling them. This project is the first step to establishing specifications for electrical stunning of electric North Sea crab and European lobster. The experiments and data processing were performed in collaboration with the institute Nofima in Norway and the Artic University of Norway. We also collaborated with two equipment manufacturers in the project.
