Xiangnan Meng is a PhD candidate supervised by Prof. Vincenzo Fogliano and Dr. Tamara Hoppenbrouwers in the Food Quality and Design Group from 2021. The topic concerns the biological activity of encapsulated hesperetin, which aims to ensure that the encapsulated hesperetin can exert its anti-inflammatory and antioxidant properties and figure out its potential fate after digestion.
