Lucas is a Spanish and Dutch full-time PhD candidate. He obtained both his BSc and MSc in Food Technology from Wageningen University & Research specializing on ingredient functionality. After a couple of years working as a product developer at The Vegetarian Butcher - Unilever. In 2023 he started a PhD at the group of Food Quality and Design. His research focuses on the obtention and application of future-proof food ingredients sourcing from microbial biomass (microalgae, bacteria, yeast and fungi). This project is under the supervision of Prof. Vincenzo Fogliano and dr. Maryia Mishyna.
