Invited Plenary Lecture of SSEB at Workshop on the Developments in the Italian PhD Research on Food Science
The 27th Workshop on the Developments in the Italian PhD Research on Food Science, Technology and Biotechnology was held in Portici (Naples), Italy between 13-15th September and was attended by over 250 PhD candidates and academics. Prof. Markus Stieger gave an invited plenary lecture entitled “Chew on it: How oral breakdown of foods drives texture and flavour perception”. The annual workshop was organized by the Department of Agricultural Sciences, University of Naples Federico II and co-funded by the Italian Society of Sensory Sciences (SISS).
